Regarding Au Pairing: I've had many babysitting jobs over the years, and I am good at handling children. I find that many conflicts with them can be solved with clear communication and lots of patience, but most parents can't find the time and energy in their already busy lives. I'd love to have that positive impact on your kids.
I am resourceful and very independent, and I would cause you no trouble regarding my stay. I have no problem with cooking and cleaning (I also have expirience with cleaning jobs).

Regarding elderly caregiver: I was raised by my grandmother, alongside my single mother, and I feel that is noticeable in my personality. As my grandmother has gotten older, our roles have reversed somewhat, as I've been taking care of her for a few years. Therefore, I have experience with elderly care, down to helping her with higiene and getting dressed.
I have always gotten along with older people, for whom some don't have the patience. It would be a dream job to help and befriend someone in that stage of their life.
